A fantastic way to use up summer squash, this homemade zucchini bread features subtle sweetness and warm hints of cinnamon, perfect for breakfast or a snack.

  • 2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the grated zucchini, sugar, and oil in a large bowl.
  3. Add the eggs and vanilla extract, mixing well.
  4. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in nuts or chocolate chips if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Notes

For best results, use freshly grated zucchini and gently fold the batter to avoid overmixing. You can customize with mix-ins like raisins or coconut.
