Mongolian Ground Beef Noodles

A fast and flavorful weeknight dinner featuring ground beef, caramelized sauce, and linguine.

Ingredients

  • 1 lb ground beef
  • 5 cloves garlic, minced
  • 1/3 cup brown sugar
  • 1/4 cup beef broth (or low-sodium broth)
  • 1/3 cup soy sauce
  • 3 tablespoons hoisin sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground black pepper
  • Pinch of red pepper flakes (optional)
  • 10 oz linguine
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 green onions, sliced for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguine according to package directions until al dente. Drain and set aside.
  2. Heat a large skillet over medium. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 6 to 8 minutes. Drain excess fat.
  3. Add the minced garlic to the browned beef and cook for about 1 minute until fragrant.
  4. Stir in brown sugar, beef broth, soy sauce, hoisin sauce, ground ginger, ground black pepper, and red pepper flakes if using. Mix well and let it simmer for 1 to 2 minutes.
  5. In a small bowl, whisk the cornstarch with the water until smooth to make a slurry. Pour the slurry into the skillet and stir until sauce thickens, about 2 to 3 minutes.
  6. Add the cooked linguine to the skillet and toss until well coated with the sauce and heated through.
  7. Transfer to plates and garnish with sliced green onions. Serve hot.

Notes

Use low-sodium soy sauce to reduce salt; swap noodles for spaghetti or lo mein; for a lighter version, use lean ground beef or turkey.
