A refreshing no-bake cheesecake combining creamy textures with the zesty brightness of fresh oranges, perfect for summer.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup fresh orange juice (about 1 large orange)
  • Zest of 1 orange
  • 1 tsp orange extract (optional)
  • 1 1/2 cups heavy whipping cream
  • 1 tbsp granulated sugar (for whipping cream)
  • 1/4 cup fresh orange juice
  • 1 tbsp powdered sugar
  • Orange zest for garnish

Instructions

  1. Combine graham cracker crumbs and granulated sugar in a medium bowl.
  2. Stir in the melted butter until the mixture resembles wet sand.
  3. Press the mixture into the bottom of a 9-inch springform pan or pie dish to create a firm crust.
  4. Place the crust in the fridge to chill while preparing the filling.
  5. Beat the cream cheese with an electric mixer until smooth and creamy.
  6. Add the powdered sugar, vanilla extract, orange juice, orange zest, and orange extract and beat until combined.
  7. Whip the heavy cream with 1 tbsp granulated sugar until stiff peaks form.
  8. Fold the whipped cream into the cream cheese mixture until smooth.
  9. Pour the orange cheesecake filling onto the chilled crust and spread evenly.
  10. Refrigerate for at least 240 minutes or overnight to allow it to set.
  11. Simmer fresh orange juice and powdered sugar in a saucepan until it thickens slightly, then let it cool.

Notes

Store the cheesecake in the fridge for up to five days. For longer storage, wrap individual portions and freeze for up to two months.
