A refreshing and easy no-bake strawberry shortcake that layers fresh strawberries, whipped cream, and cake, perfect for warm weather gatherings.

Ingredients

  • 2 lbs Fresh Strawberries
  • 1/4 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 16 oz Pre-baked Cake (such as pound cake or angel food cake)
  • 2 cups Heavy Whipping Cream
  • 1/2 cup Powdered Sugar
  • 1 tbsp Fresh Lemon Juice
  • Fresh Mint (Optional)

Instructions

  1. Wash the strawberries under cold water and hull them by removing the stems.
  2. Slice the strawberries into even pieces and place them in a medium bowl.
  3. Add the granulated sugar and lemon juice. Toss gently to coat.
  4. Let the mixture sit at room temperature for 20 to 30 minutes to draw out the juices and create a syrup.
  5. Chill a glass or metal bowl in the freezer for 10 minutes.
  6. Pour cold heavy whipping cream into the chilled bowl.
  7. Add powdered sugar and vanilla extract.
  8. Use a hand mixer or stand mixer on low speed to combine, then increase speed to medium-high.
  9. Whip until stiff peaks form, stopping when the cream holds its shape to avoid over-whipping.
  10. Take the pre-baked cake and cut it into 1-inch cubes or slabs that fit your serving dishes. Set aside.
  11. Choose your serving dishes, such as mason jars, and start with a layer of cake cubes at the bottom. Press down lightly for an even base.
  12. Spoon a portion of the macerated strawberries over the cake, including the syrup to moisten the cake.
  13. Add a thick layer of whipped cream on top and spread it evenly with a spoon.
  14. Repeat the layers of cake, strawberries, and cream until the dish is full.
  15. Top with a dollop of cream and garnish with whole strawberries or mint if desired.

Notes

Use ripe strawberries for the best flavor and chill your mixing tools for better cream consistency.
