A simple, custardy oatmeal bake filled with diced apples that’s perfect for breakfast or meal-prepping.

Ingredients

  • 2 cups old-fashioned oats
  • 1 1/2 cups milk or almond milk
  • 1 large apple, diced (Granny Smith or Honeycrisp)
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. Whisk the eggs, milk, maple syrup, and vanilla in a large bowl until combined.
  3. Add the oats, baking powder, cinnamon, and salt. Stir until well combined.
  4. Fold in the diced apple and chopped nuts if using.
  5. Pour the mixture into the greased dish and spread it out evenly.
  6. Bake for 30 to 35 minutes, until golden and the center is set.
  7. Let cool for 5 minutes before serving. Serve warm or refrigerate for later.

Notes

For vegan, substitute eggs with flax eggs. For nut-free, omit nuts and add sunflower seeds.
