Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk the flour, rolled oats, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  3. In a separate bowl, whisk together the egg, milk, vegetable oil or melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the chocolate chips using a spatula.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18 to 22 minutes, or until a skewer inserted comes out clean.
  8. Let the muffins cool in the tin for a few minutes, then transfer to a wire rack.

Notes

Old-fashioned rolled oats give the best texture; quick oats may produce a denser crumb. For gluten-free, use a 1-to-1 gluten-free flour blend.
