A simple, pantry-friendly banana bread recipe that yields a tender crumb with a caramelized crust. Perfect for overripe bananas and easy to make.

  • 3 medium extra ripe bananas, mashed (about 1 to 1 1/2 cups mashed)
  • 1 cup white granulated sugar (can substitute light brown sugar)
  • 1/3 cup canola oil (or vegetable oil)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 1/3 cups all-purpose flour, sifted
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F. Spray a 9×5 loaf pan with nonstick spray and line it with parchment.
  2. Mash the bananas in a medium bowl until mostly smooth. Stir in the sugar until combined.
  3. Add the eggs, canola oil, and vanilla. Whisk until uniform.
  4. Sift together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the banana mixture. Stir gently until just combined; small streaks of flour are okay.
  6. Pour the batter into the prepared pan and smooth the top. Tap the pan once on the counter to release air pockets.
  7. Bake for 45 to 50 minutes, checking with a toothpick for doneness.
  8. Cool in the pan for 10 to 15 minutes before removing to cool completely on a wire rack.

Notes

Use very ripe bananas for maximum sweetness and moisture. Avoid overmixing to keep the crumb tender.
