A classic Southern dessert that combines creamy pudding, ripe bananas, and crunchy vanilla wafers for a nostalgic treat.

  • 4 ripe bananas
  • 1 cup (240 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (100 g) granulated sugar
  • 1/3 cup (40 g) cornstarch
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 box (11 oz) vanilla wafers
  • Optional: whipped cream for topping

Instructions

  1. Prep your workspace and measure ingredients so everything is ready.
  2. Combine whole milk, heavy cream, and sugar in a medium saucepan over medium heat. Stir gently until the sugar dissolves and the mixture steams; do not let it boil.
  3. Whisk the cornstarch with salt in a separate bowl and add a splash of the warm milk mixture. Whisk until smooth to make a slurry.
  4. Gradually pour the slurry into the saucepan while whisking continuously to prevent lumps.
  5. Cook for a few minutes until the pudding thickens and coats the back of a spoon. Remove from heat.
  6. Stir in vanilla extract and taste, adjusting salt or vanilla as needed.
  7. Let the pudding cool slightly while you slice the bananas.
  8. Line the bottom of a large serving dish or cups with a layer of vanilla wafers.
  9. Arrange sliced bananas over the wafers and spoon a generous layer of warm pudding on top.
  10. Repeat layers of wafers, bananas, and pudding until the dish is full, finishing with a smooth layer of pudding.
  11. Cover and refrigerate for at least 240 minutes, or overnight for the best set and flavor melding.

Notes

For a lighter version, swap heavy cream with whole milk and butter. Use gluten-free cookies for a GF option. Serve chilled with whipped cream and crushed wafers on top.
