Garlic Parmesan Chicken and Potatoes

A one-pan meal featuring succulent chicken and tender potatoes infused with garlic and Parmesan flavors.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • Olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine Italian seasoning, smoked paprika, salt, black pepper, and olive oil in a mixing bowl.
  3. Coat the chicken in the seasoning mixture until evenly covered.
  4. Toss the halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and black pepper in another bowl.
  5. Spread the seasoned chicken on one side of a baking sheet and place the potatoes on the other side in an even layer.
  6. Bake for 30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
