One-Pan Honey BBQ Chicken Rice

A weeknight lifesaver dish featuring juicy chicken in a sweet and tangy honey-BBQ glaze cooked together with rice that soaks up all the delicious pan juices.

Ingredients

  • 2 cups long-grain white rice
  • 1 lb chicken thighs or breasts
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Have an oven-safe pan ready.
  2. Heat the olive oil in the pan over medium heat until shimmering.
  3. Season the chicken with salt and pepper. Add to the pan and brown for about 4 to 5 minutes per side until nicely caramelized; you do not need to cook through.
  4. Whisk the honey and BBQ sauce together in a small bowl. Pour half of this mixture over the browned chicken, coating each piece.
  5. Add the rice to the pan, spreading it evenly around the chicken. Pour the chicken broth over the rice and bring the mixture to a gentle boil on the stove.
  6. Cover the pan with a tight-fitting lid or foil and transfer it to the oven.
  7. Bake for about 25 to 30 minutes, or until the rice is tender and the chicken reaches an internal temperature of 165°F (74°C) or is no longer pink at the center.
  8. Remove the pan from the oven and spoon the remaining honey-BBQ sauce over the chicken. Let everything rest for 5 minutes before serving.
  9. Garnish with chopped green onions if you like.

Notes

For a less-sweet sauce, opt for a tangier BBQ sauce or reduce the honey slightly. Brown rice may require more liquid and time.
