A comforting one-pan dish featuring juicy chicken thighs and aromatic rice in a sweet and tangy barbecue sauce.

  • 1.5 lbs Chicken Thighs
  • 2 tbsp Olive Oil
  • 1.5 cups Long-Grain White Rice
  • 3 cups Chicken Broth or Water
  • 1 cup Barbecue Sauce
  • 0.5 cup Honey
  • 1 medium Onion
  • 3 cloves Garlic

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, cooking until softened and fragrant, about 2-3 minutes.
  3. Increase the heat to medium-high and add the chicken thighs, searing them for about 5-6 minutes on each side until browned.
  4. Pour in the barbecue sauce and honey, stirring to coat the chicken evenly.
  5. Add the long-grain rice and the chicken broth or water. Stir well, bringing the mixture to a gentle boil.
  6. Reduce the heat to low and cover the skillet. Let it simmer for approximately 20-25 minutes or until the rice is tender and the chicken reaches an internal temperature of 165°F.

Notes

Consider marinating the chicken in barbecue sauce for an hour before cooking for added flavor. Experiment with different barbecue sauces for unique taste.
