One-Pot Creamy Beef and Garlic Butter Pasta

A comforting one-pot meal featuring rich garlic butter sauce and tender pasta with savory browned ground beef.

  • 1 tbsp olive oil
  • 1 lb (450g) ground beef
  • 4 cloves garlic, minced (about 1 tbsp)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for heat)
  • 3 cups beef broth (low sodium recommended)
  • 2 cups milk (or swap for heavy cream for extra richness)
  • 12 oz (340g) pasta — penne, rotini, or fettuccine
  • 1 tsp Italian seasoning
  • ½ cup grated parmesan cheese
  • 2 tbsp butter
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a large deep skillet or pot over medium heat.
  2. Add the ground beef and cook, breaking it up, for 5 to 6 minutes until nicely browned.
  3. Stir in the minced garlic, salt, black pepper, and red pepper flakes. Cook for about 1 minute until the garlic is fragrant.
  4. Pour in the beef broth and milk, and stir to combine.
  5. Add the pasta and sprinkle in the Italian seasoning. Press the pasta down so it is mostly submerged in the liquid.
  6. Bring the pot to a gentle simmer, then cover and cook for 12 to 15 minutes, stirring occasionally.
  7. Once the pasta is tender and most of the liquid is absorbed, reduce the heat to low.
  8. Stir in the grated parmesan and butter until the sauce is smooth and creamy.
  9. Taste and adjust seasoning with extra salt or pepper if needed.
  10. Garnish with chopped parsley and extra parmesan. Serve hot.

Notes

For a lighter option, use skim milk and reduce the butter to 1 tbsp. Cool leftovers to room temperature and store in an airtight container for 3 to 4 days.
