A simple, comforting pasta dish made in one pot that results in a creamy garlic sauce clinging to every strand. Perfect for busy weeknights.

Ingredients

  • 8 oz pasta (fettuccine, penne, or similar)
  • 3 cups whole milk
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Melt butter in a large pot over medium heat until it foams.
  2. Add minced garlic and sauté for about 1 minute, stirring constantly.
  3. Pour in dry pasta and milk, season with salt and pepper, and stir to combine.
  4. Bring to a gentle boil, then lower heat to simmer and cover the pot.
  5. Cook for 10 to 12 minutes, stirring occasionally, until pasta is tender and liquid has reduced to a creamy sauce.
  6. Remove from heat and stir in grated Parmesan until melted and smooth.
  7. Adjust seasoning with salt and pepper, then serve garnished with chopped parsley.

Notes

For a richer sauce, swap 1 cup of milk for 1 cup of light cream. For a dairy-free option, use unsweetened soy or oat milk and a vegan Parmesan substitute.
