One Pot Creamy Garlic Pasta

A quick and comforting one-pot pasta cooked in a rich, garlicky milk sauce with Parmesan.

Ingredients

  • 3 to 4 cloves garlic, minced
  • 2 cups whole milk
  • 3/4 to 1 cup grated Parmesan cheese, plus extra for serving
  • 1 to 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Short pasta (like penne, fusilli, or shells)

Instructions

  1. Heat a large pot over medium heat and add the olive oil. Swirl to coat the bottom.
  2. Add the minced garlic and sauté for about 30 to 60 seconds until fragrant but not browned.
  3. Pour in the milk and gently bring it to a simmer.
  4. Add the pasta in a single layer and cook, stirring occasionally, according to the package instructions until tender.
  5. When the pasta is tender, reduce the heat to low and stir in the grated Parmesan until it melts into a smooth, creamy sauce.
  6. Taste and season with salt and pepper.
  7. Stir in chopped parsley and reserve some for garnish.
  8. Serve hot, finishing each bowl with an extra sprinkle of Parmesan and parsley.

Notes

For a heartier dish, add steamed vegetables like broccoli or peas before finishing cooking.
