A simple and delicious one-pot meal that brings together chicken, garlic, and creamy Parmesan cheese, perfect for weeknight dinners.

Ingredients

  • 2 cups chicken broth
  • 1 cup rice (long-grain or jasmine)
  • 1 pound chicken breast (cut into bite-sized pieces)
  • 1 tablespoon olive oil
  • 4 cloves garlic (minced)
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chicken pieces and cook until browned, about 5–7 minutes.
  4. Stir in the rice, chicken broth, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Stir in the grated Parmesan cheese until melted and well combined.
