A quick and satisfying dish that combines taco flavors with creamy macaroni and cheese, all prepared in one pot.

  • 8 oz elbow macaroni
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup canned tomatoes with green chilies
  • 1 cup corn (optional)
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Chopped green onions and cilantro for garnish

Instructions

  1. Heat a large pot over medium heat and brown the ground beef, draining any excess fat.
  2. Mix in the taco seasoning, ensuring the meat is well-coated.
  3. Pour in the beef broth, canned tomatoes, corn, and elbow macaroni.
  4. Bring the mixture to a boil, then reduce the heat to simmer. Cook for about 10-12 minutes until the pasta is tender and most of the liquid has been absorbed.
  5. Mix in the shredded cheese and stir until melted and creamy.
  6. Season with salt and pepper to taste.

Notes

For added flavor, consider using sharp cheddar cheese or including diced jalapeños for some heat. Leftovers can be stored in the refrigerator for up to four days or frozen for up to three months.
