Juicy, herb-scented oven baked chicken breast that’s easy for weeknight dinners yet elegant enough for special occasions.

Ingredients

  • 2 to 4 boneless skinless chicken breasts, trimmed
  • 2 tablespoons olive oil (extra virgin is fine)
  • 2 tablespoons fresh lemon juice (about half a lemon)
  • 2 to 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or 1 teaspoon chopped rosemary (or a mix)
  • 1 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and position a rack in the center.
  2. Whisk together olive oil, lemon juice, minced garlic, herbs, salt, and pepper in a medium bowl.
  3. Place chicken breasts in a bowl or resealable bag, then pour the marinade over the chicken and turn to coat. Marinate in the fridge for at least 30 minutes.
  4. Arrange the marinated chicken in a single layer in a shallow baking dish and pour any remaining marinade over the top.
  5. Bake for 25 to 30 minutes until the internal temperature reaches 165°F (75°C).
  6. Remove from the oven and let rest for 5 minutes before slicing to keep the chicken juicy.
