A creamy and golden overnight French toast casserole that’s perfect for lazy mornings and holiday brunches.

Ingredients

Scale
  • 1 loaf of challah or brioche (preferably day-old)
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • Powdered sugar for serving (optional)

Instructions

  1. Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Tear the loaf into bite-sized pieces and spread them evenly in the dish.
  3. Whisk together eggs, milk, heavy cream, brown sugar, vanilla, cinnamon, and salt until smooth.
  4. Pour the custard evenly over the bread, pressing gently so pieces soak through. Sprinkle chopped nuts on top if using.
  5. Cover the dish with plastic wrap and refrigerate overnight, or for at least 6 hours.
  6. Remove the casserole from the fridge and let it sit at room temperature for about 30 minutes.
  7. Preheat the oven to 350°F (175°C).
  8. Bake uncovered for about 45 minutes, or until the top is golden and the custard is set in the center.
  9. Let the casserole cool for 10 minutes and dust with powdered sugar before serving warm.

Notes

For a dairy-free version, substitute unsweetened almond milk and neutral oil in place of heavy cream. To reduce sugar, cut brown sugar to 3/4 cup and finish with a dusting of powdered sugar to taste.
