Pancake Poppers are a fun twist on classic pancakes, perfect for busy mornings and customizable for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Cooking spray or additional butter for greasing

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Whisk the milk, egg, melted butter, and vanilla extract in a separate bowl until combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Preheat a mini muffin pan or cake pop maker and grease it lightly.
  5. Spoon the batter into the prepared pan, filling each cavity about 2/3 full.
  6. Bake or cook for 10 to 12 minutes, or until golden and cooked through.

Notes

Measure ingredients accurately for best texture. Do not overmix the batter; a few lumps are okay. Experiment with different flours for texture variations.
