Garlic Parmesan Chicken Thighs

Crispy skin chicken thighs coated in a garlicky, cheesy sauce for a quick and impressive one-pan dinner.

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter, divided (2 tbsp for searing, 2 tbsp for sauce)
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes, optional
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle.
  2. Pat the chicken thighs very dry with paper towels.
  3. Season both sides with kosher salt and freshly ground black pepper.
  4. Heat an oven-safe skillet over medium-high heat. Add 2 tablespoons butter and 2 tablespoons olive oil.
  5. Place the thighs skin-side down and sear for 6 to 8 minutes.
  6. Flip the thighs and cook for 1 to 2 minutes on the meat side.
  7. Remove thighs to a plate.
  8. Reduce heat to medium and add the remaining 2 tablespoons butter and minced garlic, paprika, Italian seasoning, and red pepper flakes. Sauté for 30 seconds to 1 minute.
  9. Stir in the grated Parmesan.
  10. Return the thighs to the pan, spooning sauce over each piece.
  11. Transfer the skillet to the oven and bake for 15 to 20 minutes until the internal temperature reaches 165°F (74°C).
  12. Broil for 1 to 2 minutes for extra browning, if desired.
  13. Remove from the oven and let rest for 5 minutes. Sprinkle with chopped parsley before serving.

Notes

For a sharper finish, use grated Pecorino. For a lower-sodium option, reduce salt by half. Use freshly grated Parmesan for best results.
