A quick and flavorful Parmesan crusted chicken dish served with a creamy garlic sauce, perfect for busy weeknights.

  • 4 thin chicken cutlets (about 1 to 1 1/2 pounds total)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (plain or panko)
  • 1/2 cup grated Parmesan cheese, plus 1/4 cup more for the sauce
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Pat the cutlets dry and season both sides with salt and pepper.
  2. Set up a dredging station: one shallow dish with flour, one with beaten eggs, and one with breadcrumbs mixed with 1/2 cup grated Parmesan.
  3. Coat each cutlet in flour, shaking off excess. Dip into egg, then press into breadcrumb-Parmesan mixture until well coated.
  4. Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the cutlets and cook 3 to 4 minutes per side until golden brown and crisp.
  5. Transfer cooked cutlets to a plate and tent loosely with foil.
  6. Reduce the heat to medium. Add the butter to the same skillet and let it melt.
  7. Add the minced garlic and sauté for about 30 seconds until fragrant.
  8. Pour in the chicken broth and scrape up any browned bits from the pan.
  9. Stir in the heavy cream and the extra 1/4 cup Parmesan. Bring the sauce to a gentle simmer and cook until it thickens slightly, about 3 to 4 minutes.
  10. Return the chicken cutlets to the skillet and spoon the sauce over them. Let everything warm together for a minute to meld flavors.
  11. Garnish with chopped parsley or thyme and serve immediately.

Notes

For a lighter crust, use panko breadcrumbs. To make this gluten-free, swap flour and breadcrumbs for gluten-free alternatives.
