A simple yet delicious dish featuring chicken breasts coated in a crunchy Parmesan and breadcrumb crust.

  • 4 chicken breasts (about 1 to 1.25 pounds total)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or panko)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour (gluten-free if needed)
  • Olive oil for cooking (about 2–3 tablespoons)

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the center.
  2. In a shallow bowl, combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. Mix well.
  3. Beat the eggs in a second shallow bowl. Put the flour in a third shallow dish.
  4. Pat each chicken breast dry. Dredge one breast in flour, shake off excess, dip into the beaten eggs, then press into the Parmesan-breadcrumb mixture until well coated. Repeat with the remaining breasts.
  5. Heat a skillet over medium heat and add enough olive oil to coat the bottom. When the oil shimmers, add the chicken. Cook without moving for 4 to 5 minutes to get a golden crust. Flip and cook the second side for another 4 to 5 minutes.
  6. Transfer the browned chicken to a baking sheet lined with parchment or a lightly oiled pan. Bake in the preheated oven for 15 to 20 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
  7. Remove from oven and let the chicken rest for 5 minutes before serving.

Notes

Pound uneven chicken breasts to 1/2 inch thickness for even cooking. Use fine-grated Parmesan for the best melt and flavor. Panko gives a lighter crunch compared to regular breadcrumbs.
