Peanut Butter Stuffed Chocolate Chip Cookies

Indulgent cookies with a molten peanut butter center, perfect for snacks or gatherings.

  • 1 cup peanut butter (creamy)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1 egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together peanut butter, brown sugar, granulated sugar, the egg, and vanilla until smooth.
  3. In a separate bowl, whisk the flour, baking soda, and salt until evenly combined.
  4. Gradually add the dry ingredients into the peanut butter mixture and stir until you have a uniform dough. Do not overmix.
  5. Fold in the chocolate chips until distributed through the dough.
  6. Pinch off a golf-ball-sized piece of dough. Press it flat in your palm. Place a teaspoon of peanut butter in the center. Wrap the dough around the peanut butter, sealing the edges, and roll into a smooth ball.
  7. Arrange the cookie balls 2 inches apart on the prepared baking sheet. Flatten slightly if you want wider cookies.
  8. Bake for 10–12 minutes, or until the edges turn golden and the centers look set but still soft.
  9. Let the cookies cool on the baking sheet for 3–5 minutes to set the filling, then transfer to a wire rack to cool completely.

Notes

Use natural peanut butter with caution—its higher oil content can make dough looser. For dairy-free or vegan needs, swap chocolate chips and use an egg replacer.
