A hearty and fast chili recipe that’s perfect for weeknight dinners and casual gatherings.

  • 2 lbs ground beef (80% lean)
  • 2 cloves garlic, diced (or 1 teaspoon garlic powder)
  • 8 oz tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, adjust to taste
  • 1/4 teaspoon cayenne pepper, optional
  • 1/4 cup masa harina
  • 15 oz kidney beans, drained and rinsed
  • 15 oz pinto beans, drained and rinsed

Instructions

  1. Heat a large pot over medium heat. Add the ground beef.
  2. Break the meat into pieces and cook until evenly browned.
  3. Drain any excess fat from the pot.
  4. Add the diced garlic and tomato sauce. Stir and cook until fragrant, about 30 seconds to 1 minute.
  5. Sprinkle in the chili powder, ground cumin, oregano, salt, and cayenne. Stir to combine.
  6. Reduce the heat, cover, and let simmer gently for 10 to 15 minutes.
  7. If the chili becomes too thick, add a splash of water and stir.
  8. Whisk the masa harina with 1/2 cup water until smooth. Pour into the chili and stir until thickened.
  9. Add the drained beans. Simmer uncovered for 5 to 10 minutes.
  10. Remove from heat and serve hot.

Notes

For a leaner version, use ground turkey instead of beef. Rinsing canned beans reduces sodium.
