The Pioneer Woman Chili

A thick, comforting chili made with pantry staples, ground beef or turkey, and simple spices, perfect for chilly nights or game day.

Ingredients

  • 2 lbs ground beef or ground turkey
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth (or low sodium broth)
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • Spices: chili powder, cumin, paprika, cayenne pepper (optional), salt, black pepper

Instructions

  1. Gather and prep everything first. Dice the onion and bell pepper, mince the garlic, and rinse and drain the beans.
  2. Heat a large pot over medium. Add the ground beef or turkey and brown it, breaking it up with a spoon until no pink remains.
  3. Push meat to the side or remove briefly, then add the diced onion and green pepper to the rendered fat. Sauté until softened, about 4 to 6 minutes. Add the garlic and cook 30 seconds until fragrant.
  4. Stir in both cans of diced tomatoes with their juice, the tomato sauce, and the beef broth. Scrape any browned bits from the bottom of the pot for extra flavor.
  5. Add the drained kidney beans and pinto beans and stir to combine.
  6. Season with chili powder, cumin, paprika, salt, and black pepper. Add a pinch of cayenne if you want heat. Taste and adjust seasoning.
  7. Bring the chili to a gentle boil, then reduce heat to low. Simmer partially covered for 45 minutes to an hour, stirring occasionally until the chili thickens and the flavors marry.
  8. Serve hot with your favorite toppings such as shredded cheese, sour cream, sliced green onions, avocado, or tortilla chips.

Notes

Chili often tastes better after a day in the fridge because the flavors meld. It can also be made a day ahead.
