A creamy, slightly spicy chicken and white bean stew, perfect for cozy dinners.

  • 2 lbs chicken breast, cut into bite-sized pieces
  • 1 onion, chopped (yellow or sweet)
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed (cannellini or great northern)
  • 1 can (4 oz) green chilies
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup corn, fresh or frozen
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional: juice of 1 lime for brightness
  • Optional: 1 cup shredded Monterey Jack cheese for melty garnish
  • Optional: fresh cilantro for garnish

Instructions

  1. Heat 2 tablespoons olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 4 to 5 minutes. Stir in the minced garlic and cook 30 to 60 seconds until fragrant.
  3. Add the bite-sized chicken pieces to the pot. Cook, stirring occasionally, until the edges are lightly browned and the chicken is nearly cooked through, about 6 to 8 minutes.
  4. Sprinkle in the cumin, oregano, chili powder, salt, and black pepper. Stir to coat the chicken and aromatics, and let the spices bloom for about 1 minute.
  5. Add the drained and rinsed white beans and the can of green chilies. Stir to combine.
  6. Pour in 4 cups of chicken broth, scraping the bottom of the pot to loosen any browned bits. Bring to a gentle simmer and cook for 8 to 10 minutes so the flavors blend and the chicken finishes cooking.
  7. Stir in the corn and the heavy cream. Heat through for 2 to 3 more minutes; do not boil vigorously once cream is added.
  8. Finish with a squeeze of lime juice if using, and taste to adjust salt and pepper. Serve with shredded Monterey Jack and chopped cilantro on top if you like.

Notes

For a lighter finish, substitute half-and-half for heavy cream. For a vegetarian option, swap the chicken for extra beans and use vegetable broth.
