Comforting Potsticker Soup

A soul-soothing potsticker soup made with frozen potstickers, fragrant broth, ginger, garlic, and tender greens. Quick to prepare and perfect for a comforting meal.

Ingredients

  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 6 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp chili oil, optional
  • 25 frozen potstickers
  • 1 cup mushrooms, sliced
  • 2 cups bok choy, chopped
  • 2 green onions, sliced for garnish

Instructions

  1. Heat 1 tbsp sesame oil and 1 tbsp olive oil in a large pot over medium heat.
  2. Add the minced garlic and grated ginger. Sauté for 30 to 60 seconds until fragrant, stirring so nothing burns.
  3. Pour in 6 cups chicken broth, 2 tbsp soy sauce, 1 tsp rice vinegar, and 1 tsp chili oil if using. Bring the liquid up to a gentle simmer.
  4. Add the frozen potstickers to the simmering broth in a single layer if possible. Cook according to package guidance, usually 5 to 8 minutes, until they float and feel tender when nudged.
  5. Stir in the sliced mushrooms and chopped bok choy. Simmer briefly, 2 to 3 minutes, until the greens are wilted and mushrooms are heated through.
  6. Taste the broth and adjust seasoning with a pinch of salt or more soy sauce if needed. Ladle into bowls and top with sliced green onions.

Notes

For more umami, dissolve a teaspoon of miso into the warm broth at the end. Use very large potstickers, reduce the count slightly to avoid overcrowding.
