A rich and creamy broccoli cheddar soup that warms you up in just 30 minutes, perfect for a comforting meal any night of the week.

Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Melt the butter over medium heat in a large pot.
  2. Add the onions and garlic, sauté until soft.
  3. Stir in the broccoli and carrots for about 3 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Use an immersion blender to puree the soup until smooth, or blend in batches.
  7. Stir in the milk and cheddar cheese, and continue to cook until the cheese has melted.

Notes

Serve with crusty bread or crispy croutons for added texture. For a vegan option, use plant-based cheese and substitute with almond or soy milk.
