Delicious chicken skewers marinated in ranch dressing, garlic, and Parmesan, perfect for grilling.

Ingredients

Scale
  • 1 lb chicken breast, cut into 1 to 1 1/2 inch cubes
  • 1/2 cup ranch dressing
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Skewers, wooden or metal (if using wooden, soak in water 30 minutes first)

Instructions

  1. Whisk together ranch dressing, minced garlic, grated Parmesan, and a pinch each of salt and pepper in a medium bowl. Taste and adjust seasoning.
  2. Add the cubed chicken and toss until every piece is well coated. Cover the bowl and refrigerate for at least 30 minutes; up to 4 hours is fine.
  3. Preheat the grill to medium high heat. If using the oven, preheat to 425°F and use a broiler finish.
  4. Thread the marinated chicken onto skewers, leaving space between pieces for heat circulation.
  5. Grill the skewers for about 10 to 15 minutes, turning every few minutes until cooked through and charred.
  6. Let the skewers rest for 3 to 5 minutes off the heat, then serve warm.

Notes

Best enjoyed with a crisp salad or warm flatbreads. Can be refrigerated for 3 to 4 days and frozen for up to 3 months.
