A healthy and delicious salmon dish filled with creamy spinach and cheese, perfect for impressing guests or enjoying a weeknight meal.

  • 4 salmon fillets
  • 2 cups fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together chopped spinach, cream cheese, feta cheese, mozzarella cheese, and minced garlic in a bowl. Season with salt and pepper.
  3. Cut a pocket in each salmon fillet and stuff with the spinach mixture.
  4. Heat olive oil in a skillet over medium heat, and sear salmon fillets for 2-3 minutes on each side until golden brown.
  5. Transfer the salmon to a baking dish and bake for 15-20 minutes or until cooked through.

Notes

For the best results, use fresh salmon fillets and finely chop the spinach. Consider letting the stuffed salmon rest for a few minutes after baking to enhance juiciness.
