Warm, lightly spiced cookies with a perfect salty finish that feels special and homey.

Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 2 tablespoons neutral oil (canola or vegetable)
  • 1 cup light brown sugar, packed
  • 1/4 cup mild-flavored honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • Fleur de Sel, for sprinkling the tops of cookies

Instructions

  1. Preheat the oven and line a baking sheet with parchment.
  2. Cream together the butter, oil, and brown sugar until smooth.
  3. Add the honey and mix well.
  4. Incorporate the egg and vanilla, then mix until combined.
  5. Mix in the dry ingredients: flour, baking soda, salt, and cinnamon.
  6. Portion the dough into 3-tablespoon rounds and place on the prepared sheet.
  7. Chill the dough for 1 1/2 hours to firm it up.
  8. Bake at 350°F (175°C) for about 10 minutes, until the edges are set and beginning to brown.
  9. Sprinkle with fleur de sel immediately after removing from the oven.
  10. Cool slightly on the baking sheet before transferring to a wire rack.

Notes

For a nutty flavor, swap half the all-purpose flour for whole wheat pastry flour. For a dairy-free version, use vegan butter.
