Beef Sausage and Cabbage Stir Fry

A quick and economical skillet meal of beef sausage and cabbage that cooks in about 20 minutes.

Ingredients

  • 1 lb beef sausage, sliced or crumbled
  • 1 medium head of cabbage, chopped
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • Optional: sliced bell peppers, carrots, or other quick-cooking vegetables

Instructions

  1. Heat the olive oil in a large skillet or wok over medium heat.
  2. Add the sliced onion and minced garlic, sautéing until the onion is softened and translucent.
  3. Add the beef sausage and cook until browned and heated through, until the sausage reaches an internal temperature of 160°F.
  4. Stir in the chopped cabbage and any additional vegetables, tossing to combine.
  5. Cook, stirring occasionally, until the cabbage is wilted and tender, about 5 to 7 minutes.
  6. Season with salt and freshly ground black pepper to taste.
  7. Remove the skillet from the heat.

Notes

For milder sausage, choose sweet or herb-forward varieties. Napa cabbage offers a softer texture while green cabbage holds its shape better during cooking.
