Sausage and Sweet Potatoes with Honey Garlic

A comforting and fuss-free dish pairing roasted sweet potatoes with sausage glazed in a sticky honey garlic sauce.

Ingredients

  • 1 lb sausage (your choice)
  • 2 large sweet potatoes, peeled and cubed into 1-inch pieces
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Position a rack in the center.
  2. Toss the cubed sweet potatoes with olive oil, a pinch of salt, and black pepper in a large bowl until coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet.
  4. Heat a skillet over medium heat and brown the sausage, breaking it into bite-size pieces until no longer pink.
  5. Add the minced garlic to the skillet and cook for about 1 minute until fragrant.
  6. Drizzle the honey over the browned sausage and stir to coat, warming for about 30 seconds.
  7. Pour the honey garlic sausage over the sweet potatoes and toss gently to combine.
  8. Roast in the oven for 25 to 30 minutes until the sweet potatoes are tender and caramelized, tossing halfway through.
  9. Remove from the oven and let rest for a couple of minutes. Sprinkle with parsley and serve warm.

Notes

Swap olive oil for avocado oil for a higher smoke point. Start with 3 tablespoons of honey for less sweetness and adjust to taste.
