These Savory Breakfast Pop-Tarts are filled with creamy sausage gravy and soft scrambled eggs, wrapped in flaky homemade pastry, making them a perfect portable breakfast.

  • 1/4 pound breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups whole milk
  • 1/4 teaspoon seasoned salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon minced fresh rosemary (optional)
  • A pinch of dried sage (optional)
  • 5 large eggs, scrambled
  • 1 cup shredded cheddar or Jack cheese (optional topping)
  • Your favorite seasoning blend for sprinkling
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup vegetable shortening
  • 1/2 cup cold butter, cut into cubes
  • 1 large egg
  • 1 tablespoon white vinegar
  • 5 tablespoons cold water
  • 1 large egg + 2 tablespoons water for egg wash

Instructions

  1. Heat a large skillet over medium high. Add the breakfast sausage and cook until browned and crisp, about 5 to 7 minutes.
  2. Sprinkle the flour over the sausage and stir to absorb the fat. Cook for 2 to 3 minutes.
  3. Slowly whisk in the milk and reduce heat to medium low, stirring until thickened, about 4 to 5 minutes.
  4. Remove from heat and stir in seasoned salt, black pepper, and optional herbs. Set aside.
  5. Scramble the eggs in a separate pan over medium heat to your preferred doneness, then keep warm.
  6. Preheat the oven to 375°F. In a large bowl, whisk together flour and salt. Add shortening and butter, cutting them in until pea-sized crumbs form.
  7. In a small bowl, whisk egg, vinegar, and cold water. Pour into the flour mixture and stir until a dough forms. Do not overwork.
  8. Divide dough in half and roll one portion to 3/8-inch thickness. Cut into 3 by 4 inch rectangles, needing two per pop-tart.
  9. Place half the rectangles on a baking sheet, brush edges with egg wash, and spoon scrambled eggs and sausage gravy onto each. Top with remaining rectangles, sealing edges.
  10. Brush tops with egg wash, sprinkle cheese and seasonings, and bake for 25 minutes or until golden brown.
  11. Cool on the baking sheet for 5 minutes before serving warm.

Notes

For a vegetarian version, substitute with plant-based sausage and use a suitable plant milk.
