A vibrant dish featuring comforting eggs in zesty tomato sauce, perfect for breakfast, brunch, or a light dinner.

Ingredients

  • 4 large eggs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • Fresh parsley or cilantro, for garnish
  • 4 slices of bread (your choice)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and bell pepper, and sauté until soft, about 5 minutes.
  2. Stir in the minced garlic, cumin, and paprika, cooking for another minute until fragrant.
  3. Pour in the diced tomatoes and season with salt and pepper. Let simmer for about 10 minutes until the mixture thickens.
  4. Make small wells in the tomato mixture and crack the eggs into each well. Cover the skillet and cook until the eggs are set to your preference.
