Quick and festive shrimp tacos loaded with citrus, crisp cabbage, and buttery avocado.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder (or chipotle powder)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup cabbage, shredded
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Combine the shrimp with olive oil, chili powder, cumin, and a pinch of salt and pepper in a medium bowl.
  2. Heat a skillet over medium-high heat until hot.
  3. Add the shrimp in a single layer and cook 2–3 minutes per side until pink and opaque.
  4. Warm tortillas in a separate pan for 15–30 seconds per side.
  5. Assemble tacos by dividing the shrimp among the warm tortillas, topping with cabbage and avocado.
  6. Finish with cilantro and lime juice. Serve immediately.

Notes

For extra heat, add cayenne or crushed red pepper. Use gluten-free corn tortillas if necessary.
