A rich and satisfying dish featuring tender cheese-stuffed tortellini enveloped in a creamy sauce made with eggs and parmesan, enhanced by the savory notes of pancetta.

Ingredients

  • 8 oz cheese-stuffed tortellini
  • 4 large eggs
  • 1 cup grated parmesan cheese
  • 4 oz beef pancetta, diced
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil

Instructions

  1. Cook the cheese-stuffed tortellini according to package instructions.
  2. In a skillet, cook the beef pancetta over medium heat until crispy.
  3. In a bowl, whisk together the eggs and parmesan cheese.
  4. Once the tortellini is cooked, reserve some pasta water and drain the rest.
  5. Add the tortellini to the skillet with the pancetta and mix well.
  6. Remove from heat and quickly stir in the egg and cheese mixture, adding reserved pasta water if needed for creaminess.

Notes

For best results, use fresh tortellini and don’t skip reserving pasta water. Be quick when mixing in the egg and cheese to prevent scrambling.
