  • 1 cup bell peppers (sliced)
  • 1 cup onions (sliced)
  • 1 cup mushrooms (sliced)
  • 1 package (about 20 oz) cheese tortellini
  • 1 cup cream cheese
  • 1 cup beef broth
  • 1 cup shredded cheese (like provolone or mozzarella)
  • Salt and pepper to taste

Instructions

  1. Combine the sliced beef, bell peppers, onions, and mushrooms in a crock pot.
  2. Add the beef broth and cream cheese, stirring to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and the vegetables are cooked.
  4. Stir in the cheese tortellini about 30 minutes before it’s done.
  5. Once the tortellini is cooked through, stir in the shredded cheese until melted and creamy.

Notes

For best results, use beef broth made from simmering bones. You can customize with different types of cheese or add extra vegetables.
