  • 4 boneless, skinless chicken breasts
  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed
  • 1 packet ranch seasoning mix
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the halved baby potatoes and trimmed green beans on top of the chicken.
  3. In a small bowl, mix the ranch seasoning and chicken broth, then pour it over the chicken and vegetables.
  4. Drizzle olive oil over everything and season with salt and pepper as needed.
  5. Cover and cook on low for 360 minutes (6-7 hours) or high for 240 minutes (3-4 hours) until the chicken is tender and reaches an internal temperature of 165°F.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for 2-3 months. Ensure chicken is at room temperature for even cooking. For extra flavor, consider adding onions or garlic.
