A hands-off slow cooker recipe featuring moist, flavorful bone-in chicken thighs over a bed of seasoned carrots and baby potatoes, perfect for busy weeknights.

  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 3 tsp kosher salt (adjust to taste if using table salt)
  • 1 tsp ground black pepper
  • 6 bone-in, skin-on chicken thighs (about 2 1/2 pounds)
  • 2 Tbsp olive oil
  • 1 lb carrots, cut into 1-inch pieces
  • 1 lb baby white potatoes, halved if large
  • 4 garlic cloves, chopped
  • 4 thyme sprigs
  • 2 shallots, sliced
  • 1/4 cup low-sodium chicken broth
  • 2 Tbsp salted butter, cubed
  • 2 tsp cornstarch (optional, for thickening)
  • Fresh parsley, chopped, for serving (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides with garlic powder, Italian seasoning, onion powder, paprika, kosher salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. When the oil shimmers, add the thighs skin-side down. Sear until golden brown, about 3 to 4 minutes per side. Transfer the thighs to a plate.
  3. Place the carrots and baby potatoes in the bottom of the slow cooker. Season the vegetables lightly with salt and pepper. Scatter the chopped garlic and sliced shallots over the vegetables. Tuck thyme sprigs among the veggies.
  4. Arrange the seared chicken thighs on top of the vegetables, skin-side up. Pour the 1/4 cup low-sodium chicken broth around the edges.
  5. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken reaches 165°F and is tender.
  6. For a glossy finish, remove the chicken and stir the cubed butter into the juices left in the cooker so it melts and coats the vegetables. If you prefer a thicker gravy, whisk the cornstarch with a tablespoon of cold water and stir it into the juices; heat on high for 10 to 15 minutes or transfer to a skillet to thicken.
  7. Serve the chicken hot with the carrots and potatoes. Sprinkle with chopped parsley if desired.

Notes

Use boneless thighs for quicker cooking, but reduce time and check doneness often. Low-sodium broth helps control salt level.
