A rich and tangy shredded chicken dish that’s perfect for sandwiches, baked potatoes, or tacos, made effortlessly in a slow cooker.

Ingredients

  • 2 pounds chicken breasts
  • 1 packet ranch seasoning mix (or about 3 tablespoons homemade ranch blend)
  • 8 ounces cream cheese, cubed
  • 1/2 cup cooked, crumbled breakfast-style strips or vegetarian crumbles
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crock pot in a single layer.
  2. Evenly sprinkle the ranch seasoning over the top of the chicken.
  3. Scatter the cubed cream cheese over the chicken.
  4. Cover and cook on low for 6 hours or on high for 3 hours until chicken reaches 165°F and is tender.
  5. Remove the chicken to a cutting board, shred, and return to the cooker.
  6. Stir in the cooked crumbles and cheddar cheese until melted. Season with salt and pepper.
  7. Spoon into rolls, over rice, or on baked potatoes, and top with chopped green onions. Serve warm.

Notes

For a lighter version, use reduced-fat cream cheese and Greek yogurt. Refrigerate leftovers within two hours, good for 3-4 days in the fridge.
