Ingredients

Scale
  • 4 boneless, skinless chicken thighs or breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup honey (or maple syrup)
  • 1/3 cup soy sauce (low sodium preferred)
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch (optional for thickening)
  • 2 tablespoons water (optional for thickening)
  • Sesame seeds (for garnish)
  • Chopped green onions (for garnish)

Instructions

  1. Pat the chicken dry and sprinkle both sides with salt and black pepper.
  2. Whisk together honey, soy sauce, ketchup, garlic, ginger, vinegar, and red pepper flakes in a small bowl.
  3. Place the seasoned chicken in the slow cooker and pour the sauce over it, turning pieces to coat.
  4. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours until chicken is tender and reaches 165°F.
  5. If desired, remove chicken and thicken sauce in a saucepan with cornstarch slurry.
  6. Return chicken to the slow cooker or spoon thickened sauce over it, garnish with sesame seeds and green onions.

Notes

Use skinless thighs for juicier results; for a thicker sauce, follow the optional thickening step.
