Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups cooked rice

Instructions

  1. In your slow cooker, combine the chicken broth, lemon juice, olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Add the chicken breasts, making sure they are well-coated with the flavorful liquid.
  3. Cover and cook on low for 6 to 7 hours, or until the chicken is fully cooked through and tender.
  4. Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker, mixing it with the sauce to enhance the flavors.
  5. Serve the delicious chicken over fluffy cooked rice.

Notes

For enhanced flavor, marinate the chicken in the lemon herb mixture overnight. Store leftovers in an airtight container for up to 4 days or freeze for individual portions.
