Slow Cooker Lemon Herb Chicken and Rice

A comforting and flavorful one-pot dish featuring tender chicken cooked with zesty lemon and aromatic herbs.

Ingredients

  • 4 chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 cup peas (frozen or fresh)

Instructions

  1. Season the chicken breasts generously with salt and pepper. Place them at the bottom of the slow cooker.
  2. In a mixing bowl, combine the rice, chicken broth, lemon juice, lemon zest, olive oil, minced garlic, chopped rosemary, and thyme.
  3. Pour the rice mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  5. In the final 30 minutes of cooking, toss in the peas.
  6. Once finished, fluff the rice and serve the chicken, rice, and peas together.

Notes

For added flavor, consider marinating the chicken in lemon juice and herbs prior to cooking.
