  • 4 overripe bananas
  • 1 cup sugar
  • 3/4 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped pecans
  • Confectioners’ sugar (optional for dusting)

Instructions

  1. Preheat your oven to 350°F.
  2. Grease a loaf pan lightly.
  3. Combine dry ingredients in one bowl.
  4. Mix bananas with sugar until creamy in another bowl.
  5. Combine all mixtures and fold in the nuts.
  6. Bake until golden brown for 50 minutes to 1 hour.

Notes
