Soft cookies with a pillowy center, slightly crisp edges, and pockets of melty chocolate, perfect for busy weeknights or slow Sundays.

  • 8 tablespoons salted butter, melted
  • 1/2 cup white sugar
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper or a silicone mat.
  2. Melt the butter in the microwave until mostly liquid, leaving a few tiny solids for texture.
  3. Stir the melted butter with both sugars until the mixture looks creamy and slightly glossy.
  4. Add the vanilla and the egg. Mix on low speed or stir gently until just combined.
  5. Gradually add the flour, baking soda, and salt. Mix until a crumbly dough comes together but is not overworked.
  6. Fold in the chocolate chips with your hands or a spatula so they are evenly distributed.
  7. Roll the dough into large balls and place them on the prepared cookie sheet, leaving space for spreading.
  8. Bake for 9 to 11 minutes. Pull the cookies when they are puffy, edges set, and centers still look a bit underbaked.
  9. Let the cookies cool on the pan for about 30 minutes so they finish setting and remain soft inside.

Notes

Light brown sugar adds moisture and a mild caramel flavor; dark brown will deepen that flavor. Use melted butter for a softer, chewier center.
