Delicious soft snickerdoodles with a tender and chewy center, featuring a classic cinnamon-sugar crackle on the outside.

  • 1 cup salted butter, softened (2 sticks)
  • 1 1/3 cups granulated sugar
  • 1/3 cup packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3 1/4 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for rolling)
  • 1 1/2 tablespoons ground cinnamon (for rolling)

Instructions

  1. Preheat the oven to 350°F (177°C). Line baking sheets with parchment paper or silicone mats.
  2. Beat the softened butter in a large bowl until smooth and creamy.
  3. Add the granulated and brown sugars. Beat until the mixture is light and fluffy, scraping the bowl edges as needed.
  4. Add the eggs one at a time, then mix in the vanilla until smooth and combined.
  5. Whisk together the flour, baking soda, kosher salt, and cream of tartar in a separate bowl.
  6. Add the dry mixture to the wet ingredients. Mix gently until just combined and a soft dough forms. Avoid overmixing.
  7. Shape dough into 1½ to 2 inch balls. In a small bowl, combine 1/3 cup granulated sugar and 1½ tablespoons ground cinnamon. Roll each ball thoroughly in the cinnamon-sugar.
  8. Place the coated dough balls on the prepared baking sheets with about 2 inches between each to allow for spreading.
  9. Bake for 9 to 11 minutes. Look for set edges and slightly glossy centers.
  10. Immediately after removing from the oven, use the back of a spoon or your fingertips to gently push the cookie edges toward the center.
  11. Cool on the baking sheet for several minutes before transferring to a wire rack to finish cooling.

Notes

For best results, do not overmeasure flour and make sure butter is softened, not melted. You can freeze the dough balls for up to 3 months.
