  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • Salt and pepper to taste
  • Tortilla chips (for serving)
  • Side salad (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the diced onion and bell pepper until softened.
  3. Add the ground turkey and cook until browned, reaching an internal temperature of 165°F.
  4. Stir in the black beans, corn, diced tomatoes, taco seasoning, salt, and pepper.
  5. Transfer the mixture to a casserole dish and top with shredded cheese.
  6. Bake in the preheated oven for 20-30 minutes, until the cheese is melted and bubbly.

Notes
