A quick and flavorful one-skillet spicy ground beef bowl with garlic-sautéed vegetables and steaming rice, perfect for weeknights.

  • 1/2 pound ground beef (80/20)
  • 2 cloves garlic, minced (for the beef)
  • 2 tablespoons soy sauce (for the beef)
  • 1/2 teaspoon chili flakes, or adjust to taste
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1 cup broccoli florets
  • 1/2 red bell pepper, sliced into strips
  • 1/2 zucchini, sliced
  • 1/2 cup mushrooms, sliced
  • 2 cloves garlic, minced (for the veggies)
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce (for the veggies)
  • 1 cup steamed white rice

Instructions

  1. Prep everything first. Wash and chop the vegetables, mince both portions of garlic, and measure the soy sauce, chili flakes, sesame oil, and brown sugar. Heat rice so it is steaming when the rest is done.
  2. Heat a skillet over medium high heat and add the sesame oil. Add the minced garlic and cook 30 seconds until fragrant but not browned.
  3. Add the ground beef. Break it into small pieces and cook until fully browned with no pink bits. Drain excess fat if desired.
  4. Stir in 2 tablespoons soy sauce, 1/2 teaspoon chili flakes, and 1 teaspoon brown sugar. Let the mixture simmer for 3 to 4 minutes so the sauce thickens and coats the beef. Remove the pan from heat.
  5. In a separate pan, warm 1 tablespoon olive oil over medium high and add the second batch of minced garlic. Sauté for 30 seconds.
  6. Add the mushrooms and cook for 2 minutes until they release moisture. Then add the broccoli, zucchini, and red bell pepper. Stir-fry for 4 to 5 minutes so the vegetables stay tender crisp. Finish with 1 teaspoon soy sauce and toss to combine.
  7. To assemble, spoon hot steamed rice into bowls. Arrange the beef and garlic vegetables on top or side by side. Spoon any extra sauce from the beef pan over the bowl and serve immediately.

Notes

Use low sodium soy sauce if you’re watching your salt. Swap white rice for brown or jasmine rice for more fragrance. Ground turkey or a plant-based crumble can replace beef.
