1/2 pound ground beef
4 cloves garlic, minced (2 for beef, 2 for veggies)
2 tablespoons soy sauce (plus 1 teaspoon for veggies)
1/2 teaspoon chili flakes (adjust to taste)
1 teaspoon sesame oil
1 teaspoon brown sugar
1 cup broccoli florets
1/2 red bell pepper, sliced into strips
1/2 zucchini, sliced
1/2 cup mushrooms, sliced
1 tablespoon olive oil
1 cup steamed white rice
Instructions
Prepare all vegetables by washing and chopping as needed. Mince the garlic and measure out the sauces and seasonings.
In a skillet over medium-high heat, add sesame oil and minced garlic. Cook for about 30 seconds until fragrant.
Add ground beef to the skillet. Cook until well-browned, breaking it into small pieces as it cooks.
Stir in soy sauce, chili flakes, and brown sugar. Let it simmer for 3 to 4 minutes until slightly thickened, then remove from heat.
In a separate pan, heat olive oil and sauté the remaining garlic for 30 seconds.
Add sliced mushrooms and cook for 2 minutes.
Next, toss in broccoli, zucchini, and red bell pepper. Stir-fry for about 4 to 5 minutes until tender-crisp. Add the additional teaspoon of soy sauce and toss to coat evenly.
To serve, place hot steamed rice in bowls and arrange beef and vegetables on top or beside the rice. Drizzle any extra sauce over it.
Notes
For extra crunch, sprinkle with sesame seeds or fresh herbs like cilantro or green onions before serving.
